Pasilla Bajio Chili is an interesting dark brown to black variety and very well known in Mexico and the southwestern United States. The plants grow bushy and can reach up to 90 cm in height. The up to 15 cm long chilies ripen from green to dark brown and have a mild heat and a fruity and smoky flavor. Therefore, they are traditionally used for soups, stews, casseroles and salsa. But they are also ideal for roasting, drying and powder production.
