Aji cristal chili originates from Chile. It grows quite large and clearly branched plants with long leaves. It develops many elongated, red chili fruits with juicy flesh that can grow up to 8 cm long and 2.5 cm wide. They have a pleasantly fruity and sweet taste with a slightly acidic note, typical of the Capsicum baccatum variety. Aji cristal chiles are well suited for pickling or grilling with garlic oil, especially when they are still in their yellow-green phase, as this is when the flavor should be strongest. But they also add an incomparable flavor to fresh salsas or simmering sauces.
