Mature rhubarb stalks are smooth, about 25 cm long and red-green in color. They are harvested by pulling the stems out of the soil (must not be cut). Lovely, fresh flavor that should not be enjoyed raw, but prepared as a compote, jam or in baked goods. At the end of June, the harvest period ends, as the plant needs to rest for the rest of the year until next spring. NOTE! rhubarb leaves are
toxic - only the stems are edible after cooking. Thrives in sunny conditions in humus-rich, porous and sandy soil. Watered and fertilized regularly. However, it does not tolerate stagnant water. Growing rhubarb requires a little patience - but it's worth the wait.
