Scotch Bonnet Yellow Big Sun is a golden yellow and rather large variety of Scotch Bonnet. The Scotch bonnet is one of the hottest chilies in the world and is the Caribbean equivalent of the habanero chili. In addition, it also stands out with an exceptionally tropical-fruity taste and develops a rich, versatile flavor, which some say is reminiscent of apricots. Unfortunately, this special flavor is often lost when the peppers are heated or dried out.
This chili needs a lot of sun and heat, which is why it doesn’t quite reach the same proportions here as it does on its native Caribbean islands, where it is a key ingredient in the local cuisine, used in many dishes including mango or papaya salsa, grilled pork or fish. As the fruits have a very thin outer wall, they are particularly suitable for drying.
